The Wine:
Yvecourt vinification uses modern methods which nevertheless respect the traditional principles that gave Bordeaux wines their great reputation: grapes are harvested when perfectly ripe, de-stemmed and gently crushed. Maceration is completed at controlled temperatures adapted to the grape variety harvested, in different vats. Maceration lasts for around 15 days. The separation point is chosen for each vat following tasting checks, once balance of flavours has been achieved: beautiful fruit coated in soft tannins. The wines are then matured in stainless steel vats for 6 to 8 months. Every effort is made to retain the grape’s fruity character.
